Gazpacho (veggie salad)
line # qty ingredients notes
1 3 Cucumbers
2 1 Red Onion
3 2 Red Tomatoes
4 1 Red Pepper
5 3 cups tomato juice (fresh, if possible)
6 1/4C Olive oil
7 1/4C vinegar
8 1 tbsp salt
9 1 tsp pepper
10 3 cloves chopped garlic

Directions

Chop in food processor the Cucumbers, Red onion, Red tomatoes, Red pepper.

Then add the remainder of the ingredients.

Blend well and refrigerate for several hours before serving.  It is best the first day, when all the fresh ingredients are at their very most nutritional and tastiest!
